Wild Mushroom and Brie Croquettes

  • 1 lb wild mushrooms, cleaned and chopped
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1/4 cup white wine
  • 8 oz brie cheese, rind removed and cubed
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying


  1. In a large skillet, melt the butter over medium heat.
  2. Add the shallot and garlic, sauté until softened.
  3. Add the mushrooms and cook until they release their liquid and it evaporates.
