Stuffed Portobello Mushrooms

Ingredients:

  • 4 large Portobello mushrooms
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves of garlic, minced
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Clean the Portobello mushrooms by wiping them with a damp cloth or paper towel. Remove the stems and scrape out the gills using a spoon.
  3. In a bowl, mix together the breadcrumbs, Parmesan cheese, garlic, parsley, salt, and pepper.
  4. Brush the outside of the mushrooms with olive oil and place them on a baking sheet, gill side up.
  5. Divide the breadcrumb mixture evenly among the mushrooms, pressing it down gently to pack it in.
