Savory Mushroom and Onion Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 cup chopped mushrooms
  • 1/2 cup chopped onions
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
  5. Add the mushrooms and onions to the skillet and sauté until softened, about 5 minutes.
  6. Add the minced garlic and cook for an additional 1-2 minutes.
  7. Remove the mushroom mixture from the skillet and set aside.
  8. Wipe out the skillet and add the remaining tablespoon of olive oil.
  9. Pour 1/4 cup of the pancake batter into the skillet and spread it out into a circle.
  10. Cook for 2-3 minutes, or until bubbles form on the surface of the pancake.
  11. Flip the pancake and cook for an additional 2-3 minutes, or until golden brown.
  12. Repeat with the remaining batter.
  13. Serve the pancakes topped with the sautéed mushroom and onion mixture.
