Mushroom Biryani

  • 2 cups basmati rice
  • 1 cup sliced mushrooms
  • 1 onion, thinly sliced
  • 2 tomatoes, chopped
  • 1 green chili, chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • 1/4 cup chopped coriander leaves
  • 1/4 cup chopped mint leaves
  • 4 cups water
  • Salt to taste
  • 3 tablespoons ghee


Step 1: Prepare the Rice

  1. Wash the basmati rice until the water runs clear.
  2. Soak the rice in water for 30 minutes.
  3. Drain the rice and set aside.

Step 2: Saute the Ingredients

  1. Heat ghee in a large pan over medium heat.
  2. Add cumin seeds and sauté until they splutter.
  3. Add sliced onions and sauté until they turn golden brown.
  4. Add ginger-garlic paste and sauté for 2 minutes.
  5. Add chopped tomatoes, green chili, turmeric powder, garam masala, red chili powder, and salt. Cook until the tomatoes are soft.

Step 3: Add Mushrooms

  1. Add sliced mushrooms to the pan and cook for 5 minutes.
  2. Add chopped coriander leaves and mint leaves. Mix well.

Step 4: Cook the Rice

  1. Boil 4 cups of water in a separate pot.
  2. Add the soaked and drained rice to the boiling water.
  3. Cook the rice until it is 70% done. Drain and set aside.

Step 5: Layering

  1. Spread a layer of cooked rice at the bottom of a heavy-bottomed pan.
  2. Top it with a layer of the mushroom mixture.
  3. Repeat the layers until all the rice and mushroom mixture are used up.

Step 6: Dum Cooking

  1. Cover the pan with a tight-fitting lid.
  2. Cook on low heat for 15-20 minutes to allow the flavors to meld together.
