Mushroom and Tofu Stir-fry

Ingredients:

  • 1 block of firm tofu
  • 2 cups of sliced mushrooms
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1 tablespoon of ginger, minced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of cornstarch
  • 1/2 cup of vegetable broth
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. In a small bowl, mix the soy sauce, sesame oil, cornstarch, and vegetable broth to make the sauce.
  3. Heat vegetable oil in a large skillet over medium-high heat.
  4. Add the tofu cubes and cook until they are golden brown on all sides. Remove from the skillet and set aside.
  5. In the same skillet, add more oil if needed and sauté the garlic and ginger until fragrant.
  6. Add the mushrooms, bell pepper, and onion, and cook until they are tender.
  7. Return the tofu to the skillet and pour the sauce over the tofu and vegetables.
  8. Cook for another 2-3 minutes until the sauce has thickened.
