Mushroom and Swiss Chard Stuffed Pork Tenderloin

Ingredients:

  • 1 pork tenderloin
  • 1 bunch of Swiss chard
  • 1 cup of chopped mushrooms
  • 2 cloves of garlic, minced
  • 1/2 cup of shredded Swiss cheese
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the Swiss chard by removing the stems and chopping the leaves into small pieces.
  3. Heat the olive oil in a pan over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  4. Add the chopped mushrooms to the pan and cook until they are soft, about 5 minutes.
  5. Add the Swiss chard to the pan and cook until it is wilted, about 3 minutes. Season with salt and pepper to taste.
  6. Butterfly the pork tenderloin by cutting it lengthwise down the center, being careful not to cut all the way through.
  7. Open up the pork tenderloin and season both sides with salt and pepper.
  8. Spoon the mushroom and Swiss chard mixture onto one side of the pork tenderloin. Sprinkle the shredded Swiss cheese on top.
  9. Close the pork tenderloin back up and secure it with kitchen twine.
  10. Place the stuffed pork tenderloin on a baking sheet and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
