Mushroom and Swiss Chard Lasagna

Ingredients:

  • 1 pound of lasagna noodles
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 pound of mushrooms, sliced
  • 1 bunch of Swiss chard, chopped
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • 4 cups of ricotta cheese
  • 2 cups of shredded mozzarella cheese
  • 1 cup of grated Parmesan cheese
  • 2 eggs
  • 1 jar of marinara sauce

Instructions:

  1. Preheat the oven to 375°F.
  2. Cook the lasagna noodles according to the package instructions, then drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the onion and garlic, and cook until softened.
  5. Add the mushrooms and Swiss chard, and cook until the mushrooms are browned and the chard is wilted.

  11. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
