Mushroom and Spinach Stuffed Acorn Squash

Ingredients:

  • 2 acorn squash
  • 1 tablespoon olive oil
  • 1 small onion, diced

  • 8 oz mushrooms, chopped

  • 1/4 cup grated Parmesan cheese
