Mushroom and Spinach Quesadilla

Ingredients:

  • 2 large flour tortillas
  • 1 cup sliced mushrooms
  • 1 cup fresh spinach leaves
  • 1 cup shredded cheese (cheddar or mozzarella works well)
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a skillet over medium heat.
  2. Add onions and garlic, sauté until onions are translucent.
  3. Add mushrooms and cook until they are tender.
  4. Add spinach and cook until wilted.
  5. Season with salt and pepper to taste.
  6. Remove vegetable mixture from skillet and set aside.
  7. Place one tortilla in the skillet.
  8. Sprinkle half of the cheese on the tortilla.
  9. Spread the vegetable mixture over the cheese.
  10. Sprinkle the remaining cheese on top.
  11. Place the second tortilla on top.
  12. Cook for 2-3 minutes on each side until the tortilla is crispy and the cheese is melted.
  13. Remove from skillet and let cool for a minute before slicing.
