Mushroom and Spinach Lasagna Roll-Ups

Ingredients:

  • 8 lasagna noodles
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions:

  1. Preheat the oven to 375°F.
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the onion and garlic, and cook until softened, about 5 minutes.
  5. Add the mushrooms and cook until they release their liquid and start to brown, about 5-7 minutes.
  6. Add the spinach and cook until wilted, about 2 minutes. Remove from heat and let cool.
  7. In a bowl, combine the ricotta cheese, parmesan cheese, egg, oregano, salt, and pepper. Add the mushroom and spinach mixture and stir to combine.
  8. Spread a thin layer of marinara sauce in the bottom of a baking dish.
  9. Lay out a cooked lasagna noodle and spread a generous spoonful of the cheese mixture along the length of the noodle.
  10. Roll up the noodle and place it seam side down in the baking dish. Repeat with the remaining noodles and cheese mixture.
  11. Pour the remaining marinara sauce over the roll-ups and top with the shredded mozzarella cheese.
  12. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
