Mushroom and Sausage Pasta Bake

  • 8 oz pasta
  • 1 lb Italian sausage, casings removed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 can diced tomatoes
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste


  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, cook the Italian sausage over medium heat, breaking it up with a spoon, until browned and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the chopped onion and garlic. Cook until the onion is translucent, about 5 minutes.
  5. Add the sliced mushrooms to the skillet and cook until they are soft and browned.
  6. Stir in the diced tomatoes, marinara sauce, oregano, basil, salt, and pepper. Cook for another 5 minutes.
  7. Combine the cooked pasta, Italian sausage, and tomato-mushroom sauce in a large bowl. Mix well to combine.
