  • 1 butternut squash, peeled and diced
  • 1 pound mushrooms, sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

  1. Preheat the oven to 400°F.
  2. Place the diced butternut squash on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with paprika, cumin, salt, and pepper. Toss to coat evenly.
  3. Roast the butternut squash in the oven for 25-30 minutes, or until tender and slightly caramelized.
  4. While the butternut squash is roasting, heat the remaining olive oil in a large skillet over medium heat.
  5. Add the diced onion and cook until translucent, about 5 minutes.
  6. Add the sliced mushrooms and minced garlic to the skillet. Cook until the mushrooms are golden brown and any liquid has evaporated.
  7. Once the butternut squash is done roasting, add it to the skillet with the mushrooms and onions. Toss everything together and cook for an additional 5 minutes to allow the flavors to meld.
  8. Season with additional salt and pepper if needed.
  9. Serve the mushroom and roasted butternut squash hash hot, garnished with fresh parsley.
