Mushroom and Lentil Loaf

Ingredients:

  • 1 cup of green or brown lentils

  • 1 tablespoon of tomato paste

  • 1 teaspoon of dried oregano
  • 1/2 cup of breadcrumbs
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the lentils under cold water and place them in a pot with the vegetable broth. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the lentils are tender. Drain any excess liquid and set aside.
