  • 2 cloves of garlic, minced
  • 8 oz of mushrooms, chopped
  • 1 carrot, grated
  • 1 celery stalk, diced
  • 1 tablespoon of tomato paste
  • 1 tablespoon of soy sauce
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • 1/2 cup of breadcrumbs
  • Salt and pepper to taste
  • Olive oil for cooking

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the lentils under cold water and place them in a pot with the vegetable broth. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the lentils are tender. Drain any excess liquid and set aside.
  3. In a large skillet, heat some olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  4. Add the mushrooms, carrot, and celery to the skillet. Cook until the vegetables are tender and the mushrooms have released their moisture.
  5. Stir in the tomato paste, soy sauce, thyme, oregano, salt, and pepper. Cook for another 2-3 minutes.
  6. Transfer the mushroom mixture to a large mixing bowl. Add the cooked lentils and breadcrumbs. Mix everything together until well combined.
  7. Grease a loaf pan with some olive oil. Transfer the lentil and mushroom mixture into the pan, pressing it down firmly.
  8. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown.
  9. Let the loaf cool for a few minutes before slicing and serving. Enjoy your delicious mushroom and lentil loaf!
