Ingredients:

  • 1 cup of dried lentils
  • 2 cups of vegetable broth
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 8 oz of mushrooms, sliced
  • 1 can of crushed tomatoes
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1/4 cup of red wine (optional)
  • Spaghetti or pasta of your choice

Instructions:

  1. Start by cooking the lentils. In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the lentils are tender.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and sliced mushrooms to the skillet. Cook for another 5-7 minutes, until the mushrooms are browned.
  4. Stir in the crushed tomatoes, dried oregano, dried basil, salt, and pepper. If using red wine, add it at this point. Let the sauce simmer for 10-15 minutes to allow the flavors to meld together.
  5. Once the lentils are cooked, add them to the skillet with the mushroom and tomato sauce. Stir to combine and let it simmer for an additional 5-10 minutes.
  6. While the sauce is simmering, cook the spaghetti or pasta according to the package instructions.
  7. Once the pasta is cooked, serve it topped with the mushroom and lentil bolognese sauce. Enjoy!

Tips:

  • You can customize this recipe by adding other vegetables like bell peppers, zucchini, or carrots.
  • For a cheesy twist, sprinkle some nutritional yeast or vegan cheese on top before serving.
  • If you prefer a thicker sauce, you can blend a portion of the lentils with some of the cooking liquid before adding them to the skillet.
