  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken by removing any giblets from the cavity and patting it dry with paper towels.
  3. In a small bowl, mix together the mushrooms, herbs, garlic, olive oil, salt, and pepper.
  4. Stuff the mushroom and herb mixture into the cavity of the chicken.
  5. Place the chicken in a roasting pan breast side up.
  6. Tie the legs together with kitchen twine to help the chicken cook evenly.
  7. Roast the chicken in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).
  8. Once the chicken is cooked, remove it from the oven and let it rest for about 10 minutes before carving.
  9. Serve the mushroom and herb roasted chicken with your favorite side dishes and enjoy!

  • For extra flavor, you can add lemon slices or onion wedges to the cavity of the chicken.
  • Make sure to baste the chicken with pan juices every 30 minutes for a moist and flavorful result.
  • You can also add white wine or chicken broth to the roasting pan for added moisture and flavor.
