Ingredients:

  • 1 sheet of frozen puff pastry, thawed
  • 1 tablespoon olive oil
  • 1 small onion, thinly sliced
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 1 cup shredded Gruyere cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface to fit a 9-inch tart pan. Press the pastry into the pan and trim any excess dough.
  3. In a skillet, heat the olive oil over medium heat. Add the sliced onion and cook until softened, about 5 minutes.
  4. Add the mushrooms to the skillet and cook until they release their liquid and start to brown, about 8 minutes.
  5. Stir in the garlic, thyme, salt, and pepper, and cook for another minute.
  6. Spread the mushroom mixture evenly over the puff pastry in the tart pan.
  7. Sprinkle the Gruyere and Parmesan cheeses over the mushrooms.
  8. Bake the tart in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the cheese is bubbly.
  9. Remove the tart from the oven and let it cool for a few minutes before slicing.
  10. Sprinkle the chopped parsley over the top before serving.
