Ingredients:

  • 1 sheet of puff pastry
  • 1 tablespoon olive oil
  • 1 small onion, thinly sliced
  • 8 oz mushrooms, sliced
  • 2 cloves of garlic, minced
  • 4 oz goat cheese, crumbled
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a baking sheet lined with parchment paper.
  3. Using a fork, prick the pastry all over to prevent it from puffing up too much.
  4. Bake the pastry in the preheated oven for 10-15 minutes, or until it is golden brown and puffed up.
  5. While the pastry is baking, heat the olive oil in a skillet over medium heat.
  6. Add the sliced onion and cook until softened, about 5 minutes.
  7. Add the mushrooms and garlic to the skillet and cook until the mushrooms are soft and any liquid has evaporated, about 10 minutes.
  8. Season the mushroom mixture with salt and pepper to taste.
  9. Once the pastry is done baking, remove it from the oven and spread the mushroom mixture evenly over the top.
  10. Sprinkle the crumbled goat cheese and chopped thyme over the mushrooms.
  11. Return the tart to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  12. Remove the tart from the oven and let it cool slightly before slicing and serving.
