  • 4 boneless, skinless chicken breasts
  • 1 cup of sliced mushrooms
  • 1/2 cup of crumbled goat cheese
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of dried thyme
  • 1/4 cup of chicken broth

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, cut a pocket into each chicken breast, being careful not to cut all the way through.
  3. In a skillet, heat the olive oil over medium heat. Add the mushrooms and garlic, and cook until the mushrooms are softened.
  4. Remove the skillet from heat and stir in the goat cheese, thyme, salt, and pepper.
  5. Stuff each chicken breast with the mushroom and goat cheese mixture.
  6. Secure the pockets with toothpicks to keep the filling inside.
  7. Place the stuffed chicken breasts in a baking dish and pour the chicken broth over them.
  8. Cover the dish with foil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  9. Remove the foil and broil the chicken for an additional 5 minutes to brown the top.
  10. Serve hot and enjoy your delicious mushroom and goat cheese stuffed chicken!
