Mushroom and Feta Stuffed Peppers

  • 4 large bell peppers
  • 1 cup diced mushrooms
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
