Mushroom and Chicken Pie

Ingredients:

  • 1 lb chicken breast, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp flour
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 package of pre-made pie crust

Instructions:

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat some oil over medium heat.
  3. Add the diced chicken breast and cook until browned on all sides.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent.
  6. Add the sliced mushrooms and cook until they are soft.
  7. Sprinkle the flour over the mushroom mixture and stir to combine.
  8. Slowly pour in the chicken broth, stirring constantly to avoid lumps.
  9. Add the heavy cream, thyme, salt, and pepper. Stir until the sauce thickens.
  10. Return the cooked chicken to the skillet and mix well.
  11. Roll out one pie crust and place it in a pie dish.
  12. Pour the chicken and mushroom mixture into the pie crust.
  13. Roll out the second pie crust and place it on top of the filling.
  14. Pinch the edges of the pie crusts together to seal the pie.
  15. Make a few slits in the top crust to allow steam to escape.
  16. Bake the pie in the preheated oven for 30-35 minutes, or until the crust is golden brown.
  17. Let the pie cool for a few minutes before slicing and serving.
