Mushroom and Cheese Manicotti

Ingredients:

  • 1 package of manicotti shells
  • 1 cup of ricotta cheese
  • 1 cup of shredded mozzarella cheese
  • 1 cup of grated Parmesan cheese

  • 1/2 cup of chopped onion
  • 2 cloves of minced garlic
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper to taste
  • 2 cups of marinara sauce
  • 1/4 cup of grated Parmesan cheese for topping

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Cook the manicotti shells according to the package instructions. Drain and set aside.
  3. In a large mixing bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, mushrooms, onion, garlic, oregano, basil, salt, and pepper.
  4. Using a piping bag or a spoon, stuff the cooked manicotti shells with the cheese mixture.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Arrange the stuffed manicotti shells in the baking dish.
  7. Pour the remaining marinara sauce over the manicotti shells.
  8. Sprinkle the 1/4 cup of grated Parmesan cheese on top.
  9. Cover the baking dish with foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
