Mushroom and Cheese Lasagna

Ingredients:

  • 1 pound of lasagna noodles
  • 2 cups of sliced mushrooms
  • 2 cups of shredded mozzarella cheese
  • 1 cup of grated Parmesan cheese
  • 1 cup of ricotta cheese
  • 1 can of tomato sauce
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a large skillet, heat some olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened.
  4. Add the sliced mushrooms to the skillet and cook until they are soft and browned.
  5. Stir in the tomato sauce, dried oregano, dried basil, salt, and pepper. Let the sauce simmer for a few minutes.
