Mushroom and Balsamic Onion Tart

  • 1 sheet of frozen puff pastry, thawed
  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 1 teaspoon sugar
  • 1/4 cup balsamic vinegar
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1/2 cup shredded Gruyere cheese
  • 1/4 cup chopped fresh parsley


  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and place it on a baking sheet lined with parchment paper.
  3. Using a sharp knife, score a 1-inch border around the pastry (do not cut all the way through).
  4. Prick the inside of the pastry with a fork to prevent it from puffing up too much.
  5. Heat the olive oil in a large skillet over medium heat. Add the onions and sugar, and cook until the onions are caramelized, about 20 minutes.
  6. Stir in the balsamic vinegar and cook for another 5 minutes until the vinegar has reduced and the onions are coated.

  8. Spread the onion mixture over the puff pastry, leaving the border untouched. Top with the mushroom mixture and sprinkle with Gruyere cheese.
