Ingredients:

  • 1 pound of mixed mushrooms (such as cremini, shiitake, and oyster)
  • 6 slices of bacon, cooked and crumbled
  • 1/4 cup of olive oil
  • 2 tablespoons of balsamic vinegar
  • 1 tablespoon of Dijon mustard
  • 1 clove of garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons of chopped fresh parsley

Instructions:

  1. Start by cleaning the mushrooms. Remove any dirt with a damp paper towel and slice them into bite-sized pieces.
  2. Heat a skillet over medium heat and cook the bacon until crispy. Once cooked, remove the bacon from the skillet and let it cool before crumbling it.
  3. In the same skillet with the bacon drippings, add the mushrooms. Cook them until they are golden brown and tender, about 5-7 minutes.
  4. While the mushrooms are cooking, whisk together the olive oil, balsamic vinegar, Dijon mustard, garlic, salt, and pepper in a small bowl to make the dressing.
  5. Once the mushrooms are cooked, remove them from the skillet and place them in a large mixing bowl.
  6. Pour the dressing over the mushrooms and toss to coat them evenly.
  7. Add the crumbled bacon and chopped parsley to the bowl and gently mix everything together.
  8. Let the salad sit for a few minutes to allow the flavors to meld together before serving.
  9. Enjoy your delicious mushroom and bacon salad as a side dish or a light lunch!
