  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken breasts to the skillet and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.
  4. In the same skillet, add the butter and sauté the onion until translucent.
  5. Add the garlic and mushrooms to the skillet and cook until the mushrooms are browned.
  6. Pour in the Marsala wine and chicken broth, scraping up any browned bits from the bottom of the skillet.
  7. Return the chicken breasts to the skillet and simmer for 10-15 minutes, or until the chicken is cooked through.
  8. Stir in the heavy cream and simmer for an additional 5 minutes.
